I have a BA degree in psychology, I am considering going back to school- MA, BS, AS, or Cert Program?

I am considering going back to school but cannot decide if I should allow my frustration with a basically useless degree steer me in a different direction or continue with MA in psych. For the most part, my interests remain in the Human Services field, my most major interests being (in no particular order):

Early Childhood Education (a local school is offering a cert program with eligibility for teacher certification upon completion)

Nursing (a local school is offering an accelerated program for BA holders in other fields)

Phlebotomy (another cert program and possible groundwork for later transition/schooling in nursing)

Healthcare Admin (AS degree)

*Are certificate programs worth the time or should I just go for the higher degrees right away?

What I will say is this ; America is aging --- the "BabyBoomers" are starting to retire now , and soon will accelerate into the millions, in just a few more years.
Health care will expand , as well as in home visits -- Retirement centers / Rest homes should "explode"--- Health foods/supplements , and "beauty aids" are now building , and will reach higher levels quickly, with each passing year.
Think of entering a field supplying a service, and/or a product to this ever growing portion of the population.
It can certainly offer you long term "job security".
